What happens if i don't allow the countdown of the "Aftermath" section comes to an end? the system itself offers to select a new team as the season is over while the countdown of the simulation of resetting the season haven't finished yet. So; can i pick my new team already? Or should i wait for the end of the countdown?

Hi, you can't pick a new team even if the system offers you to because you're still currently manager a team.
Why the rush? It's better to wait till the season resets so you avoid any glitch or bug if eventually you're allowed to pick a new team by the engine.
