How do these work? Every time I've entered a crew battle, I'm automatically connected to another crew.

There are two kinds of battles, battles created by OSM users and battles created by OSM, the battles you are talking about are battles of OSM, if you want to play a battle vs some group of here you have to agree with the mod about rules, etc.
